Egg-stravagant Eggs! Let's start with the star of the show – eggs! A fluffy quiche loaded with seasonal veggies and a bit of gooey cheese is a great healthy option to serve a number of guests. 

Ingredients:

  • 1 pie crust (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup sliced mushrooms
  • 2 cups spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 6 eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). If using a store-bought crust, follow package instructions for pre-baking.

  2. Sauté onion, bell pepper, and mushrooms in olive oil until softened.

  3. Add spinach, cook until wilted, then season with salt and pepper.

  4. Spread sautéed veggies and cherry tomatoes in the pre-baked crust. Top with shredded cheese.

  5. Whisk together eggs and milk, season with salt and pepper, then pour over veggies and cheese.

  6. Bake for 35-40 minutes until set and golden brown.

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • Cooking spray or extra butter, for greasing the pan
  • Whipped cream, fresh fruit, or maple syrup for serving (optional)

Instructions:

  1. In a mixing bowl, whisk together the flour, matcha powder, sugar, baking powder, and salt until well combined.

  2. In a separate bowl, beat the egg lightly, then stir in the milk and melted butter.

  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; it's okay if there are a few lumps.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

  5. Using a ladle or measuring cup, pour the pancake batter onto the skillet to form the shape of an Easter bunny. You can use a spoon to help shape the ears and round body.

  6. Cook the pancake until bubbles form on the surface and the edges begin to set, about 2-3 minutes.

  7. Carefully flip the pancake and cook for an additional 1-2 minutes on the other side, until golden brown and cooked through.
