Ingredients:
- 1 pie crust (store-bought or homemade)
- 1 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 1 cup sliced mushrooms
- 2 cups spinach, chopped
- 1 cup cherry tomatoes, halved
- 6 eggs
- 1 cup milk
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions:
